Bikini Recipe

Yields 10 guests

To make the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

To prepare the Syrup: Combine every components in a pot, bring to a simmer, mixing to dissolve. Next, remove from the burner allowing it to cool down completely. Pour to a sterilised bottle, seal and store in the fridge, where it will keep for up to four weeks.

For the Cocktail Base: Mix the specified liquids into one sizeable container, leave to sit for an hour, then pass it through preferably using cheesecloth, making it completely strained.

When ready to serve: Measure 85ml from the batch mix to a mixing glass filled with ice, and stir carefully for a minute to chill. Strain into a chilled martini glass or a similar vessel, decorate with some cranberries and complete it with a light spray of the essential oil over the drink.
